VARIETY AND PROCESSING
Pink Bourbon Washed: We harvest ripe coffee beans from the trees. These beans are passed through a pulping machine, which partially removes the outer pulp of the coffee, leaving a layer of mucilage adhered to the bean.

We leave the beans to ferment for 42 hours, which causes the mucilage to release and remain on the beans, fermenting and adhering to them.

After pulping the grains, they are placed in the dryer to eliminate excess moisture. During 20–25 days the drying process takes place, the coffee beans are spread out in thin layers and turned every 5 days to ensure uniform dryness. This drying time can vary according to climatic conditions and ambient humidity, but generally takes one to two weeks. During this time, the beans lose their moisture and become stable in water content.

Our family's coffee business has a rich and storied tradition that started with our great-grandfather, Carlos Enrique Rivera, who grew coffee with passion and dedication near the Mesa de Elías Huila in Colombia.​

 

His coffee beans were renowned for their quality and sold to Colombian families. As the representative of the south of Huila of the National Federation of Coffee Growers of Colombia (FNC), he not only improved the quality of our growers but also shared his knowledge about the coffee production process.

The passage expresses pride in the family's long history of excellence in coffee production and community leadership. We are committed to passing down the passion for coffee production to future generations to ensure transparency and education for the children of coffee growers.
